Chocolate Mousse

Whether you are aiming for a guilt-free dessert, pudding topping or filling, this creamy delicious sweet indulgence is loaded with a nutrient density that is nothing to sneeze at!  The optional chia seeds add a lovely texture and pack this baby full of omegas too.  Don’t forget, you can leave the salt out or simply add a splash of lemon juice instead to make this healthy raw dessert completely Sugar Oil and Salt (SOS) free.

 

What you need, combined in a food processor or blender:

2 ripe avocados, scooped out with a spoon

2/3 cup cocoa powder (unsweetened, raw, organic preferred)

1/2 cup liquid or fruit sweetener (Maple syrup, date syrup, 3-4

soaked dates or 1-2 bananas)

2/3 cup coconut milk (or vegan milk of choice)

 

The following are OPTIONAL, but I don’t recommend skipping them all 😉

2 tsp vanilla extract (or try almond extract or peppermint extract for a delightful twist!)

3 tablespoons chia seeds, soaked in 1 tablespoon water and drained

Dash of himalayan sea salt OR 1 tablespoon lemon juice, OR 1 tsp cinnamon

 

Combine all your ingredients in your swirly bladed mixer of choice, being mindful to sandwich your dry ingredients in between wet ones so they incorporated easier. Blend for 1 minute, and then scrape down the sides of your blender with a spatula, and blend for another 30 seconds.  When satisfied that you have a homogenous mix, take it out and serve!

Serves 4-6 alone, or up to 8-10 if paired with fruit. 20160222_082943.jpgServe with bananas or strawberries if desired, or enjoy on its own, as a cupcake topping, as a cake layer mortar, or as a fondue dip!
